Fermented with wild yeast and aged on its lees for four months before bottling, the wine opens in the glass with fragrant notes of orchard fruit and cut green herbs, followed by hints of orange blossom and lemon grass. On the palate, it's medium-bodied and balanced, with a crisp, mineral-tinged finish.
