Ripe agaves from Puebla are roasted underground, naturally fermented, and then double-distilled in copper pots. The nose suggests bright tropical fruit, white flowers and smoke, followed on the palate by hints of green herbs, poblano peppers and roasted cactus. A perfect introduction to craft mezcal.
